Unlike barrels, which can only be toasted for short durations, French oak staves can undergo a toasting process that lasts up to 18 hours. This extended toasting period helps tame the tannins inherent in French oak, resulting in a smoother, more refined flavor.
Additionally, French oak boasts a higher concentration of hemicellulose, which breaks down into sugar molecules during the toasting process. This characteristic contributes to the bourbon’s sweet and caramelized notes. The ability to toast the staves longer also allows for a greater concentration of flavor compounds, enhancing the depth and complexity of the final product.

A rescue buzzard will be onsite, providing educational experiences and photo opportunities.
