This whiskey has got some funk to it - kind of earthy and musty with notes of tobacco what I imagine a cigar box might smell of. Really enjoying how different this tastes. Every expression begins with an idea, and Ember is no exception. In order to create a complex, 128.8 proof mix that enhances the char and wood spice aromas without the heat, Shaylyn carefully chose three distinct barrels of high proof Kentucky Straight Bourbon because she was intrigued by the difference between hot and cold. All that being said I do think there is quite a bit of heat which is apparent from the nose through the palette with strong notes of cinnamon throughout.
