14 Whiskey Wish List Bottles Worth Hunting Down

The Bottles That Keep You Hunting

Every serious whisky drinker has a mental list — bottles glimpsed at a bar, praised in a tasting room, or spotted on a shelf before the price tag sent them walking. Some are allocated rarities released once a year in small batches; others are permanently in production but somehow always out of stock. The wish list spans continents, styles, and price points, from Islay peat monsters and Taiwanese single malts to Kentucky unicorns and Pacific Northwest originals. What they share is a reputation that outpaces availability, whether that's down to genuine scarcity, distribution quirks, or the kind of word-of-mouth heat that empties shelves in days. These 14 bottles are worth tracking down.

Pappy Van Winkle 15 Year: The Sweet Spot of the Range

Built on Buffalo Trace's wheated bourbon mash bill — the same used across the Weller lineup — the 15 Year is bottled at 107 proof (53.5% ABV) after a minimum of 15 years in new charred white oak. Many experienced drinkers consider it the sweet spot of the entire Pappy range, arguing that the 20 and 23 Year expressions can tip toward excess oak influence, while this one hits the right balance of age and vibrancy. The nose delivers caramel, butterscotch, and dark fruit, while the palate shifts into darker territory: chocolate, leather, and cherry skins. Its MSRP sits around $120, though finding it at that price is the real challenge, with most bottles landing far above retail on the secondary market. Buy it now.

George T. Stagg: Barrel-Proof Buffalo Trace at Its Peak

Released each autumn as part of the Buffalo Trace Antique Collection, George T. Stagg is an uncut, unfiltered barrel-strength bourbon that typically clocks in at between 130 and 140 proof depending on the vintage. The 2024 release drew from barrels that entered the warehouse in fall 2008 through spring 2009, giving the whisky over 15 years of maturation and landing at 136.1 proof. It consistently earns placement near or at the top of blind tastings, with notes of dark chocolate, dried fruit, espresso, and massive oak-driven spice. Retail allocation is extremely tight, with even large retailers receiving only single bottles per cycle, making it one of the most genuinely scarce bottles in American whiskey. Buy it now!

Ardbeg Uigeadail: Peat and Sherry in Perfect Tension

Named for the loch on Islay from which Ardbeg draws its water, Uigeadail (pronounced "Oog-a-dal") is a no-age-statement expression that marries the distillery's heavily peated spirit with a proportion of ex-Oloroso sherry cask maturation. The result is bottled at a consistent 54.2% ABV without chill filtration, delivering a whisky that bridges smoky, briny Islay character with rich dried fruit, coffee, and dark chocolate sweetness. It won the World Whisky of the Year title at the International Whisky Competition in 2021, scoring 95.9 out of 100. Unlike many wish list bottles, it remains widely available at a fair price — the challenge is simply that once you taste it, every other bottle of your budget suddenly feels like a compromise. Kavalan Solist Vinho Barrique: Taiwan's World-Best Malt

Founded in 2005 in the northeastern Taiwanese county of Yilan, Kavalan Distillery has earned a global reputation by leveraging Taiwan's subtropical climate to produce richly matured single malts in a fraction of the time required in cooler regions. The Solist Vinho Barrique is the range's flagship achievement — it took the World's Best Single Malt title at the 2015 World Whiskies Awards. The expression is produced in single-cask, cask-strength form using American oak barrels that have held both red and white wine, then been shaved, re-toasted, and charred before filling. Expect an intense nose of dark berries, dried plum, and vanilla oak, with the palate delivering a dark fruit onslaught balanced by hints of chardonnay-like acidity and a long, gently drying finish. William Larue Weller: The Antique Collection's Wheated Wildcard

The sole uncut, unfiltered wheated bourbon in the Buffalo Trace Antique Collection, William Larue Weller is released annually in the autumn and routinely generates the same scramble as its siblings. Jim Murray's Whisky Bible famously named it the second finest whisky in the world in 2015, and a 2016 bottling earned a Double Gold medal at the San Francisco World Spirits Competition. It typically enters the bottle at barrel strength — often north of 125 proof — made from Kentucky corn, North Dakota wheat, and malted barley. While it shares a mash bill DNA with the Weller core range and Pappy Van Winkle, the barrel-strength delivery and the selection of particularly well-aged casks give it a depth and raw intensity that sets it clearly apart. Westland Garryana: An American Single Malt Unlike Any Other

Westland Distillery in Seattle produces the Garryana series using barrels made from Garry oak — a Pacific Northwest hardwood also known as Oregon white oak — which imparts flavours wildly different from the European or American white oak used in virtually every other whisky on earth. Each annual edition draws on a specific set of Garryana barrels, resulting in nutty, resinous, coconut-tinged notes layered over Westland's malt-forward base spirit. The 8th Edition was ranked third worldwide on Whisky Advocate's 2023 Top 20 list, making it the highest-ranked American whiskey that year, while a Wine Cask Finish expression from the distillery appeared on the same list in 2024. Stock is extremely limited, with demand so high that a sophisticated 2025 warehouse theft targeted barrels of ten-year-old Garryana worth nearly $1 million. Buy it now!

Sazerac 18 Year Rye: The BTAC Bottle Worth Chasing

Part of the five-expression Buffalo Trace Antique Collection released each autumn, Sazerac 18 is one of the oldest readily attributed rye whiskies in American production, bottled at a modest 90 proof (45% ABV) — making it the most immediately approachable of the BTAC lineup. Its relatively low strength can occasionally allow wood to dominate, but exceptional vintages showcase a refined bouquet of dried herbs, dried fruit, cocoa, and a satisfying rye spice that lingers on the finish. The 2024 release drew particular praise, with reviewers noting it as one of the most enticing editions of the expression in years. Annual production is allocated tightly across the country, meaning most enthusiasts see it only in passing or on secondary market listings at multiples of its $100 retail price. Buy it now!

Springbank 15 Year: Campbeltown's Most Sought-After Release

Springbank Distillery in Campbeltown is one of a tiny number of Scottish distilleries that still malts its own barley, distils, matures, and bottles entirely on site — a level of craft autonomy virtually unmatched in the industry. The 15 Year is matured in a combination of fresh sherry butts and refill hogsheads, resulting in a spirit that straddles styles: fruity and waxy with maritime salinity, notes of dark toffee, dried apricot, subtle smoke, and brine. Springbank's independence and genuinely limited annual output mean demand consistently outstrips supply, with bottles frequently disappearing from online retailers within minutes of going live. It sits at a price point that makes the hunt feel justified the moment you taste it — complex, honest, and unmistakably Campbeltown.

Michter's 25 Year Bourbon: The Definition of a Unicorn Release

Even among avid collectors, Michter's 25 Year Straight Bourbon qualifies as a genuine unicorn — releases can be separated by multiple years, and when one does appear, it tends to vanish within hours. The bourbon is bottled at 58.1% ABV, with master distiller Dan McKee and master of maturation Andrea Wilson hand-selecting the barrels that meet the standard for release. Tasting notes consistently feature enormous complexity: dark caramel, leather, candied pecan, dried fruit, and a long warm finish punctuated by toasted oak spice. Michter's earned a devoted following through its track record of releasing American whiskeys that reward patience, and the 25 Year is the ultimate expression of that philosophy — ultra-rare, non-negotiably expensive, and genuinely worth every cent for those lucky enough to find it. Glenmorangie Signet: The Chocolate-Malt Experiment That Became a Classic

Glenmorangie Signet is one of the most technically unusual whiskies in the core range of any major Scottish distillery, incorporating whisky made from high-roast "chocolate" malt — the same grain used in dark beers and stouts — which contributes a distinctive espresso and dark chocolate foundation not found in any other expression from the distillery. It is matured in a combination of ex-bourbon casks and heavily toasted virgin American oak, then blended to achieve an unusually rich, mocha-driven profile layered with ginger, orange zest, and dried fruit. The Signet scored a remarkable 97 points at the International Whisky Competition in 2016, claiming that year's top whisky title. It has climbed significantly in price since its debut, making earlier bottles a collectors' regret and current ones a splurge that most seasoned drinkers consider worthwhile. Buy it now!

Redbreast 21 Year Old: Irish Pot Still Maturity at Its Finest

Redbreast has become the standard-bearer for traditional Irish single pot still whiskey, and the 21 Year is the crowning expression of the core range, distilled at Midleton Distillery in County Cork from a mash of both malted and unmalted barley — the defining characteristic of the pot still style. Matured in a combination of ex-bourbon American oak barrels and Oloroso sherry-seasoned butts, it delivers the signature pot still spice and creaminess alongside deep dried fruit, dark toffee, toasted almond, and a long, warming finish. It represents a style almost entirely unique to Ireland and one that has taken considerable time to gain the international recognition it deserves, now firmly in the conversation for best Irish whiskey at any age. Availability has improved over recent years but bottles still move quickly at specialist retailers, particularly around the autumn release window. Buy it now!

Kilchoman Loch Gorm: Islay's Farm Distillery Sherry Bomb

Kilchoman, established in 2005, is the most westerly distillery on Islay and one of the few Scottish distilleries still growing and malting a portion of its own barley on site — a genuine farm-to-bottle operation that gives it an independent character distinct from its island neighbours. The Loch Gorm expression is a once-a-year limited release matured exclusively in Oloroso sherry casks, a style rarely seen from Kilchoman, which typically favours bourbon wood. The result is a peated Islay single malt that swaps the usual brine-and-vanilla profile for rich dark fruit, sultana, clove, and tar-edged smoke — a combination that earns it loyal anticipation each spring. Annual batch sizes are genuinely small, and the combination of Kilchoman's growing cult following and limited distribution means bottles frequently sell out before they reach secondary shelves.

High West Midwinter Night's Dram: Utah's Beloved Annual Release

High West Distillery in Park City, Utah, has built a reputation for producing and sourcing outstanding American whiskeys, and the Midwinter Night's Dram is its most anticipated annual release — a blend of straight rye whiskies finished in French oak port wine barrels and oloroso sherry barrels. The rich, spiced profile plays on contrasts: the rye delivers pepper, baking spice, and dried herb character while the port and sherry finishing layers in plum, berry jam, cocoa, and vanilla sweetness, creating a warming, dessert-like dram well suited to its seasonal positioning. It is released each autumn in limited quantities, and new acts within the series refine the blending approach slightly from year to year, making vintage tracking part of the enthusiasm. High West represents a craft tier that proves American whiskey innovation extends well beyond Kentucky. Buy it now!

Glenglassaugh Sandend: The Coastal Speyside the World Just Discovered

Glenglassaugh Distillery on the northeast Scottish coast lay dormant for over two decades before being revived, and has rapidly made up for lost time — the unpeated Sandend expression was named Whisky Advocate's Whisky of the Year for 2023, a recognition that placed the distillery firmly on global radar. Sandend balances honey sweetness with a distinct seaside mineral quality, reflecting the distillery's coastal location on the Moray Firth, with additional notes of stone fruit, vanilla cream, and a light briny finish. The peated counterpart, Portsoy, draws from the same location but adds waves of smoke for those who prefer an added dimension. Both expressions represent outstanding value compared to their reputation, though that gap has been closing rapidly as awareness and demand continue to grow since the Whisky of the Year win.
