8 Irish Whiskeys That Pair Well With a Guinness

Why Irish Whiskey and Guinness Belong Together

Ireland's two most iconic exports have been enjoyed side by side for generations, and the pairing makes intuitive sense. Guinness is a dry stout built on roasted barley, coffee, dark chocolate, and treacle, with a deceptively light body and a nitrogen-smooth finish. The best Irish whiskeys to reach for alongside it are those with caramel, toffee, fudge, vanilla, and golden syrup notes — flavors that complement rather than fight the stout's bitterness. Ex-bourbon cask maturation is the common thread, though sherry finishes and even stout-cask expressions bring their own compelling dimension to the pairing. Whether you sip them alternately or treat the whiskey as a chaser, the grain-based kinship between the two drinks makes almost any combination worth exploring.

Jameson Black Barrel: The Stout-Lover's Dram

Jameson Black Barrel is widely regarded as one of the finest Irish whiskey companions to a pint of Guinness, and it's easy to understand why. It's matured in double-charred first-fill bourbon casks — the so-called black casks — which deliver a smoother, richer, creamier result than the standard Jameson. The nose leads with toffee, banana, and ripe peaches, while the palate rounds out with caramel, oat, and toasted oak. Those buttery vanilla and caramel notes mirror Guinness's roasted sweetness rather than clash with it, creating a seamless back-and-forth between sips. It has won multiple awards over the years and remains one of the most recommended Irish whiskeys for pairing with a stout. Buy it now!

Redbreast 12: Single Pot Still Sophistication

Redbreast 12 is the world's best-selling single pot still Irish whiskey, produced at the Midleton Distillery in County Cork using a mash of malted and unmalted barley before triple distillation in copper pot stills. It is matured in a combination of ex-bourbon American oak casks and Oloroso sherry-seasoned Spanish oak butts, which gives the whiskey a silky, full-flavored profile with caramel, honey, vanilla, toasted nuts, and a touch of dark cocoa. That subtle cocoa note is exactly what makes it sing alongside Guinness — the stout's roasted bitterness draws out the whiskey's spiced fruit depth, while the whiskey's sweetness softens the beer's dry finish. The palate closes with notes of pepper, dark fruit, and a long, warm finish that lingers comfortably between sips of stout. For drinkers wanting something with genuine complexity, Redbreast 12 is arguably the most rewarding Guinness companion on this list. Buy it now!

McConnell's 5 Year Old: A Belfast Revival Built for Stout

McConnell's is a brand with a long and storied Belfast heritage, originally established in 1776 before disappearing in 1958 and being revived in 2020. The 5 Year Old expression is matured in American oak barrels, making it a natural source of the caramel, toffee, fudge, and vanilla notes that pair most effectively with Guinness. It's a lighter, more accessible whiskey that doesn't overpower the stout, instead creating a soft interplay of sweet cereal warmth against the stout's roasted coffee and treacle notes. The approachable price point makes it a great pick for a casual pub session rather than a special-occasion sip. As one of the more affordable craft-ish revivals on the Irish whiskey shelf, it punches well above its modest price.

Teeling Small Batch: Rum Cask Twist on a Classic Pairing

Teeling Small Batch is the flagship expression from Dublin's Teeling Whiskey, a blend of malt and grain whiskeys first aged in ex-bourbon barrels and then finished for up to 12 months in Central American rum casks. It's bottled at 46% ABV without chill-filtration, delivering a noticeably richer, fuller texture than most standard Irish blends. The nose brings dried fruit, toffee, malty sweetness, and banana, while the palate offers honey, brown sugar, vanilla, and a lively spice finish with a caramel tail. The rum cask sweetness adds a tropical, slightly exotic edge that contrasts playfully with Guinness's dark roast character, creating a pairing that feels more adventurous than the obvious choices. It's a widely available, reasonably priced bottle that gives Guinness drinkers a distinctive detour from the usual suspects. Buy it now!

Bushmills Black Bush: Sherry Weight Meets Stout Depth

Black Bush is Bushmills' richest core expression, containing a higher proportion of malt whiskey aged predominantly in former Oloroso sherry casks, which gives it a noticeably deeper, fruitier character than the standard Bushmills white label. The palate delivers dark fruit, citrus, biscuit-like malt, and a layer of dried grape sweetness that aligns beautifully with Guinness's malt-forward backbone. Bushmills itself dates to 1608 in County Antrim, Northern Ireland, and the distillery is known for producing triple-distilled malt-forward whiskeys with a honeyed, creamy quality. The sherry influence in Black Bush specifically adds that extra dimension of dried fruit and nutty warmth that mirrors the subtle chocolate and coffee notes in the stout. It's one of the most recommended companions to Guinness among bartenders at Irish pubs worldwide. Buy it now!

Tullamore D.E.W.: The Crowd-Pleasing Caramel Bridge

Sipping Tullamore D.E.W. alongside a pint of Guinness is said to create a natural sweet caramel-coffee combination that brings out the best of both drinks. The whiskey is a triple-distilled Irish blend, triple-cask matured in ex-bourbon barrels, ex-sherry casks, and refill barrels — a combination that adds gentle layers of apple, vanilla, caramel, and light citrus spice. The name D.E.W. honors Daniel Edmund Williams, who started as a stable boy at the original distillery at age 15 and became its manager by 25. At 40% ABV and widely available for around $35, it's one of the most accessible entry points in this pairing guide. The whiskey's triple-distilled smoothness keeps things easy and approachable, making it an ideal first-time Guinness pairing for drinkers new to the combination. Buy it now!

Whistler Stout Cask: When Whiskey Meets Its Beer Twin

This craft release from Boann Distillery and its sister brewery Boyne Brewhouse is about as close to a purpose-built Guinness pairing as whiskey gets. The process involves taking sherry hogsheads, filling them with an award-winning imperial stout for six months, then emptying them and resting Whistler Premium Blend Whiskey in those same stout-seasoned casks. The result is a whiskey loaded with espresso coffee bean, rich dark chocolate, malt, sea-salted caramel, and cinnamon sugar — essentially mirroring many of Guinness's own flavour hallmarks. Drinking it alongside a Guinness creates a layered, immersive experience where the two drinks echo and reinforce each other rather than contrast. It's a small-batch Irish craft expression that demonstrates just how naturally whiskey and stout belong in each other's company.

Glendalough Double Barrel: Sherry Finish for Stout Sessions

Glendalough Double Barrel is a single grain Irish whiskey from the independent Wicklow-based Glendalough Distillery, founded in 2011, first aged in flame-charred bourbon barrels and then finished for around six months in slow-toasted Oloroso sherry barrels. The sherry cask finish brings caramel, cocoa powder, brown sugar, and a warming subtle spice to the fore, with a pleasant fruit-driven sweetness on the tail. Those sherry-driven caramel and cocoa notes are a natural bridge to Guinness's roasted barley and chocolate malt character, with the stout's bitterness sharpening the whiskey's sweeter edges in a complementary way. The bottle won Double Gold at the 2015 San Francisco World Spirits Competition and Gold at the Irish Whiskey Awards in both 2015 and 2017. It represents an independent distillery worth seeking out for anyone looking to step beyond the mainstream Irish whiskey names. Buy it now!
