Cold temperatures cause certain naturally occurring compounds in the whiskey to clump together, making them easier to catch in a filter before the spirit ever hits the bottle.
In this process, whiskey is chilled in tanks to around 28 degrees Fahrenheit. As the sub-freezing temperature triggers flocking, it becomes easier to remove those compounds via filtration. Modern chill filtration goes further by using micro-porous media such as paper, fabric, and diatomaceous earth to remove a multitude of invisible substances. Once a batch of whiskey is chilled, it's pumped under pressure through a series of plates and frames containing the filtration media, and then bottled.
It's worth pointing out that all whiskey, after it matures, is filtered to remove solids and sediment from the barrel. Chill filtration is a step beyond that — a more deliberate, deeper cleaning of what's left behind. Coarse filtration, which entails passing the spirit through a filter to catch any char or toast from the barrel that became detached, is standard practice. Chill filtration is a whole different animal.
So What Exactly Gets Removed?
This is where things get interesting — and honestly, where the debate really lives. The compounds removed include things like proteins, esters, sediment, and fatty acids. These aren't scary chemicals. They're natural byproducts of the whiskey-making process itself.
Fatty acids are organic acids that can be found in the grains used to produce whiskey, such as barley. During the fermentation process, these acids are produced by yeast as it breaks down sugars in the grains. Esters are compounds formed during fermentation when acids react with alcohol. Both of these play a role in how your whiskey ultimately tastes and feels in your mouth.
The most important esters in haze formation are ethyl laurate, a C14 molecule, and ethyl palmitate and ethyl-9-hexadeanoate, both of which are C18 molecules. Those are a mouthful, no question. But what you really need to know is that these compounds are flavor-carrying molecules — and removing them could potentially diminish the flavor of the whiskey, albeit to a very modest extent.
Within whiskey there are a number of congeners, protein chains, fatty acids, esters, oils, and fats. If you bring the whiskey to temperatures between -10 and 4°C and then pass it through a very fine filter, certain types of these compounds come out of solution and form into clumps that can't pass through. The exact size of the particles removed will vary depending on the distillery's filtration process and the size of the filter's pores. This is measured in microns, with a pore size of 5 microns common.
Everything that gets filtered out is perfectly safe to consume, so there's no real risk in not chill-filtering whiskey. Let's be crystal clear on that point. Nobody is chill filtering because those fatty acids are gonna hurt you. This is purely about looks — and to some degree, flavor control.
Why Do Distilleries Do It in the First Place?
Here's the honest answer: it's mostly about appearances. Most producers who chill-filter do so because they worry consumers may be turned off by a bottle of hazy liquid. When you drop a couple of ice cubes into a non-chill filtered whiskey, or add a splash of water, you can get what's called "floc" — a cloudy haze that floats through the liquid. It looks like something went wrong with the bottle. It didn't. But try explaining that to a new customer standing in a liquor store.
Chill filtration prevents the whiskey from becoming hazy when in the bottle, when served, when chilled, or when water or ice is added, as well as precluding sedimentation from occurring in the bottle. For a big commercial distillery selling millions of bottles to a wide audience, that peace of mind is worth a lot.
Fred Noe, master distiller at Jim Beam, says the only reason he chill-filters is to eliminate haze. "You can lose a little bit of flavor and texture with chill-filtering," he notes. "But we know how to do it right, so that we don't lose too much." Eddie Russell over at Wild Turkey is on the same page. "It does take out some of the mouthfeel of the whiskey," he says. "It also removes a slight hint of the color."
That last bit — color — is something most people don't think about. But it's real. The same compounds that create haze also carry some of the natural color picked up during barrel aging. Filter them out, and your whiskey can come out looking just a touch lighter.
What Does It Actually Do to the Taste?

One noticeable difference is that non-chill filtered bourbon tends to have a more full-bodied mouthfeel. The fatty acids enhance the inherent richness, making the overall experience more indulgent and satisfying. One had been chill filtered, one hadn't. He didn't tell me which was which. It's not a commercial, cynical approach to chill filtration — it's a flavor-led approach that can be adjusted based on what the whiskey makers believe is best suited to each individual whiskey.
The ABV Factor Nobody Talks About Enough
Here's something that gets glossed over a lot in casual conversation: ABV matters a whole lot when it comes to whether chill filtration is even necessary. It is only necessary for whiskey that's bottled below 46.3% alcohol, as the cloudiness does not occur at or above this concentration.
Non-chill-filtered whiskeys rarely flock because fatty acids, proteins, and esters stay in solution in high-proof whiskeys. This is why you'll see a lot of cask strength and barrel proof releases proudly labeled "non-chill filtered" — at those higher proofs, the alcohol itself keeps everything in check. The haze problem basically doesn't exist until you start watering things down for a lower ABV bottle.
Relatively few Scotch whisky distilleries chill-filter whiskies over 46% ABV, and fewer still chill-filter above 50% ABV. In the U.S., however, larger distilleries like Jim Beam and Wild Turkey chill-filter most of their expressions, even those bottled at higher ABVs, while Michter's chill-filters all of its whiskeys, including those bottled at cask strength. So there's clearly some variation in philosophy here even when the science doesn't necessarily demand it.
Does It Actually Ruin the Whiskey?
Short answer: probably not. Longer answer: it depends on who you are and what you're looking for in a glass.
Chill-filtration is a mildly controversial practice among whiskey faithful, considered by some to be a perfectly harmless way to clarify and fine-tune the final product, and by others to be an unnecessary intervention that can mute the vibrancy of a whiskey's flavor.
Some distillers have taken a very strong stance against it. Some noted whiskey makers such as Ian MacMillan feel that chill filtering is the enemy of flavor. MacMillan, formerly of Burn Stewart Distillers, convinced the company to stop chill filtration on all its single malts and to raise its bottle strength to 46.3% ABV. This included notable whiskies such as Bunnahabhain, Tobermory, and Deanston — and this was done not just for special releases, but for all the company's single malt whiskies, even the lower price point drams.
Others have done the blind tasting thing and come away less convinced the difference is as big as the marketing makes it sound. A Malt Maniacs study involving blind tasting of various chill-filtered and non-chill-filtered whiskies came to the conclusion that it is not possible to judge by taste whether a whiskey is chill-filtered or not. In fact, the test subjects preferred the chill-filtered version of the whisky in 13 out of 16 cases. Take that however you want — but it's worth knowing.
Chill-filtration, or the lack of it, is not an indication of a whiskey's quality; it's a fining method, a step of the production process at which distillers and blenders can make different choices. That's the most fair and level-headed take you'll find on this subject. A great whiskey is a great whiskey, filtered or not.
Should "Non-Chill Filtered" Change What You Buy?
Here's the real question — and honestly, the answer is personal. If you're a mouthfeel guy, somebody who pays close attention to how a pour coats your tongue and lingers on the finish, then yes, you might genuinely prefer a non-chill filtered bottle. One distiller, whose brand offers only non-chill filtered whiskey, argues that even more than flavor, chill-filtration "takes away mouthfeel, which is very important to our senses and our reaction when tasting."
Chill-filtering affects the flavor of a whiskey by removing certain compounds that contribute to its taste and mouthfeel. In general, non-chill-filtered whiskies are thought to have a fuller body and a richer flavor than chill-filtered whiskies. But — and this is a big but — that doesn't automatically mean the chill-filtered version is worse. It means it's different.
